It's that time of year again. No, not just Christmas. It's time to decide what kind of oyters I want to use in the Christmas Eve stew this year. Pacific or Eastern. Pacific are very easy to find locally but are HUGE and can be gritty. Eastern oysters are small and tender and just yummy. However, I have to order them ahead of time. Since we don't have a seafood market in town, I have to order them directly and have them overnighted. Oh, and they're far more expensive - even without the shipping costs. I do wonder how Xmas Eve oyster stew became a family tradition. I can't imagine a slew o' oysters in Iowa. Perhaps it was a Depression thing and they used canned oysters.
